Crockpot Cooking

If you are like me, cooking a good meal is something I do not have the time to do on a regular basis.  So, I rely on my crockpot a lot.  I love the ease of putting ingredients together in a pot and the flavors melding together and simmering into a delicious meal. To get ideas for these meals, I use slow cooker cookbooks that I check out at the East Lansing Public Library.  My two favorite slow cooker cookbooks are Slow Cooker Revolution and Slow Cooker Revolution 2, opens a new window by America’s Test Kitchen, opens a new window.  These cookbooks introduce good, doable recipes from soups to stews to chocolate cheesecake; all made in a crockpot.  I had no idea you could make a cheesecake in a slow cooker.  A couple of other slow cooker cookbooks I like are Skinny Slow Cooker, opens a new window which has 150 calorie-smart recipes and Fresh from the Vegetarian Slow Cooker, opens a new window.
